Detox Salad

The cruciferous family of vegetables provide powerful detox medicine! Cruciferous vegetables include broccoli, cauliflower, Brussels sprouts, cabbage, and kale. I love this salad any time of the year. My detox salad is full of color and provides a beautiful presentation. After all, vibrant food equals vibrant life!

Salad Ingredients:

  • 3 c finely chopped kale 

  • 2 c finely chopped cauliflower

  • 2 c finely chopped broccoli 

  • 2 c matchstick carrots 

  • 2 c finely chopped purple cabbage 

  • 2 c finely chopped Brussels sprouts 

  • 1 c finely chopped green onion 

  • 1 c dried cranberries

  • 1 c slivered almonds 

  • Top with avocado slices 

  • Dressing Ingredients:

  • 3 Tbsp olive oil

  • 1/3 c fresh lemon juice

  • 1 tsp grated ginger 

  • 2 tsp honey

  • 2 tsp dijon mustard 

  • Salt and pepper to taste 

Directions: 

In a large serving bowl combine all salad ingredients, except avocado. In a large mason jar, add all dressing ingredients and shake well to combine. Add dressing into salad ingredients and toss well. Top with avocado slices and enjoy!
